Description
Craigmillar Mellomallo Marshmallow is a sweet filling of United Kingdom origin, made from glucose syrup, sugar, water, maize starch and dried egg white.
It is used for filling cream and meringue topping and can be oven flashed; for meringue, 2 kg Mellomallo is whisked with 600 g egg white to peak. Contains: eggs, sulphites. May contain: milk, soya. Suitable for vegetarians. Store in a cool, dry place below 20 °C and do not freeze; once opened keep between 15 and 25 °C with the lid replaced after use; unopened shelf life is 161 days after production, supplied in a 10 kg pack.
