Description

Craigmillar Rich Celebration Cake Mix from CSM (Bakemark) is a cake mix for celebration cakes, with wheat flour, sugar, palm fat and rapeseed oil as its leading ingredients, ammonia caramel colour, and Great Britain as its country of origin.

For rich fruit cakes, the traditional recipe adds 22 % water, 35 % egg and 2 % Textrolene/Glycerine on 100 % dry mix, with the fruit blended in on low speed until fully distributed. Contains: cereals containing gluten, eggs, milk. May contain: soya. Suitable for vegetarians. Store cool, dry and infestation free below 20 °C; unopened shelf life is 300 days from production, and it is supplied in a 12.5 kg pack.

How to use

Intended use: Production of high quality rich fruit cakes
Dosage: 22% water, 35% egg, 2% Textrolene/Glycerine on 100% dry mix (traditional recipe)
Instructions: Traditional recipe: 100% dry mix 12.5kg, 22% water 2.75kg, 35% egg 4.37kg, 2% Textrolene/Glycerine 250g, 70% sultanas 8.75kg, 50% currants 6.25kg, 25% cherries 3.12kg, 11% mixed peel 1.37kg. Luxury recipe: 87% sultanas, 60% currants, 30% cherries, 13% mixed peel.
Preparation: Place dry ingredients in a bowl fitted with a beater. Add all liquid over 1minute on low speed. Scrape down. Beat for 2 minutes on slow speed. Blend in fruit on low speed until fully distributed.
