Description

Dawn Prairie Vanilla Cookie Base is a cookie mix made with wheat flour, sugar, vegetable oils and demerara sugar with natural flavouring, for cookie production in bakeries.

Cookies are made from 1000 g premix, 150 g margarine or butter (butter added cold, never melted) and 60 ml water, and baked at 200 °C for 12 minutes. Contains: cereals containing gluten, eggs, milk. May contain: soya. Suitable for vegetarian, halal and kosher diets. Store in a cool, dry place at a maximum of 21 °C; shelf life unopened is 9 months, and it is supplied in a 12.5 kg pack.

How to use

Orange peel cookies half-dipped in dark chocolate on cooling rack

Intended use: Cookie mix plain.
Instructions: Add the butter cold with the mix, never melt it, as this can have a negative effect during baking, resulting in a firmer, biscuit-type cookie without the chewy centre.
Instructions: Prepare cookies in advance, freeze as pucks, then bake off on demand.
Instructions: Add flour to the mix to get more yield (200g flour for 1kg mix).
Instructions: Replace butter with margarine, either fully or 50-50%.
Instructions: With Dawn cookie mixes, just add water and butter and you are on your way to authentic American style cookies, chewy on the inside and crunchy on the outside.
Preparation: 1000g Premix, 150g Margarine/ Butter, Mix for 3-5 Minute at medium speed. Add 60ml water blend until mixed through. If required add 150g chocolate chunks, dried fruit, Nuts etc. Prepare rolls approx 6cm diameter, cool and cut cookies. Bake at 200ºC for 12 minutes.
