Description

Dawn Foods Golden Genoese Cake Base is a sponge cake mix made with fortified wheat flour, sugar, egg white powder and egg yolk powder, for Genoese sponge production in bakeries.

Used for birthday and celebration cakes, gateaux, slab cakes or fairy cakes, it needs only oil and water and bakes at 170 °C in a deck oven for 40–45 minutes. Contains: cereals containing gluten, eggs, milk. May contain: soya. Suitable for vegetarian, halal and kosher diets. Store in a cool, dry place at a maximum of 21 °C; shelf life unopened is 12 months, and it is supplied in a 12.5 kg pack.

How to use

Cut naked drip cake with light sponge layers and coffee cream

Intended use: Easy to handle products that make level, fine textured and consistent cakes, perfect for a variety of uses such as birthday and celebration cakes, gateaux, slab cakes or fairy cakes.
Instructions: Easy to make - just add oil and water.
Preparation: Cake Base 1000g, Water (1) 400g, Vegetable Oil 100g, Water (2)175g. Add Base to the bowl Add water (1) & vegetable oil over 1 minute on slow speed. Mix for 4 minutes on medium speed. Scrape down. Add water (2) and mix for 2 minutes slow speed. Scale into lined tin. Bake at 170°C for 40-45 minutes in a deck oven.
Baking temperature: 170°C (deck oven)
Baking time: 40-45 minutes
