Description

Dawn Dark Devil’s Chocolate Genoese Cake Base is a chocolate sponge cake mix made with sugar, fortified wheat flour and 8 % fat reduced cocoa powder, for Genoese cake production in bakeries.

Used for birthday and celebration cakes, gateaux, slab cakes or fairy cakes, it is mixed with water and vegetable oil and baked at 165 °C for 40 minutes (or until baked). Contains: cereals containing gluten, eggs, milk. May contain: soya. Suitable for vegetarian, halal and kosher diets. Store in a cool, dry place at a maximum of 21 °C; shelf life unopened is 12 months, and it is supplied in a 12.5 kg pack.

How to use

Dark chocolate cupcakes with chocolate frosting and raspberries

Intended use: These easy to handle products make level, fine textured and consistent cakes that are perfect for a variety of uses such as birthday and celebration cakes, gateaux, slab cakes or fairy cakes.
Instructions: Premix 1000g, 1st Water 420g, Vegetable Oil 110g, 2nd Water 200g. Add Premix to the bowl. Add 1st water & vegetable oil over 1 minute on speed 1 then 4 mins speed 2. Scrape down. Add 2nd water and mix for 2 minutes on speed 1. Scale at 1200g into prepared tin and level the surface. Bake at 165°C for 40 minutes (or until baked). Deck Oven 2 top, 2 bottom. These instructions are intended as a guide and may require changes to fit individual bakery conditions
