Description

Zeelandia Berliner Complete is a complete doughnut mix for Berliner-style doughnuts, with wheat flour as its leading ingredient followed by vegetable oils (palm, rapeseed), egg powder, sugar and whey powder.

Use 20 kg Berliner Complete to 40 kg wheat flour type 550, with a dough temperature of 26–28 °C, and fry the doughnuts at 180 °C for about 6–8 minutes, turning them twice. Contains: cereals containing gluten, eggs, milk, soya. May contain: sesame. Store cool (below 25 °C) and dry (humidity up to 75 %) for a shelf life of 180 days unopened; supplied in a 20 kg bag.

How to use

Chocolate-glazed filled doughnuts with white drizzle, one bitten open

Dosage: 20 kg Berliner Complete to 40 kg wheat flour type 550
Instructions: Mix all ingredients until dough is well developed, 4 minutes at low and 8 minutes at high speed, dough temperature 26 - 28°C, first proof approx. 15 minutes, divide the dough into 1680 g pieces, round up, second proof approx. 10 minutes, divide each piece into 30, mould, final proof approx. 50 minutes, last 10 outside the proof chamber. Fry doughnuts at 180°C for about 6 – 8 minutes, overturning them twice.
Baking temperature: 180°C frying
Baking time: about 6 – 8 minutes frying
